Baking soda is a natural chemical compound that is mined and processed to achieve the high purity needed for food and household applications.
It not only use as a chemical purpose but it plays an important role in the kitchen as well.
You might used baking soda in baking but did you know its also a healthy and safe to use meat tenderizer, a lot of restaurants use baking soda as a tenderizer for red meat dishes such as beef stir-fry or even for kababs.

How to Use Baking Soda for Tenderizing

The method is simple and requires only a small amount of baking soda:
Preparation: Cut the meat into strips or cubes (this method works best for smaller pieces, like those used in stir-fries or stews).
The Mix: Dissolve approximately 1 teaspoon of baking soda in about 1/2 cup of water for every 1 to 1.5 pounds of meat.
Soak: Soak the meat in the baking soda solution for about 15 to 20 minutes. Do not exceed 30 minutes, as soaking too long can give the meat an undesirable soapy or chemical taste.
Rinse & Pat: Rinse the meat thoroughly under cold running water to remove any residual baking soda solution. This step is crucial to ensure no soapy flavor remains.
Dry: Pat the meat completely dry with paper towels before seasoning and cooking. Excess moisture will hinder browning and searing.

Boneless beef strips 500 grams
Garlic 3 cloves (crushed)
Oil 2 tablespoons
Onion 1 medium (slices)
Capsicum 1 medium (slices)
Green chilies 1 medium (slices, deseeded)
Salt ½ teaspoon
Black pepper 1 teaspoon
White pepper ¼ teaspoon
Soya sauce 2 tablespoon
White vinegar 1 tablespoon
Ketchup 4 tablespoon
Corn starch as needed
Sesame seeds for garnish
Method:
Marinate the beef strips with ½ teaspoon of baking soda.
In a pan or wok add oil, garlic and beef strips,
Saute till color changes,
No add salt, black pepper, white pepper, ketchup, soya sauce and vinegar,
Add little water and cook till tender,
Now add the veggies and mix well,
Add dissolve corn starch in water and thicken the gravy,
Garnish with sesame seeds and serve with rice or pasta
